Achiote Salmon

Achiote Marinade:
1 Tbsp. achiote
2 tsp. curry powder
1/4 tsp. cumin
1/8 tsp. dry mustard
1/8 tsp. coriander
1 garlic clove
2 shallot
1/2 C. soy sauce
1 C. olive oil blend
2 lemons, zested and juiced
Blend all ingredients minus oil in blender, slowly pour in oil to emulsify.
4 Salmon Collars of Salmon Fillets, marinated in achiote and grilled.
Watermelon:
Rind removed
Quinoa:
1 C. Quinoa
3 C. corn stock
1/4 C. leek
1/4 C. celery
3 basil leaves
salt/ pepper
Simmer Quinoa in a stock or broth, such as corn or chicken, until tender, about 20 minutes. The grain will bloom when done. Add small diced leek, celery, and season with salt, pepper, and Chiffonade of Basil. Serve warm over sliced watermelon.
