Chili Pepper Chicken

Ingredients:
4 cleaned chicken breasts
8 oz thinly sliced peppers
4 oz sliced onion
2 cups quinoa or rice
4 cups chicken stock
4 tbs butter
salt and pepper to taste
Bring stock to a boil and add quinoa. Cover and let simmer for 15 minutes. Grill or pan sear chicken. Saute peppers and onions in one tbs butter over high heat until caramelized. Reduce heat and add remaining butter stirring continually. Season to taste. Serve chicken and peppers over quinoa.
