Beef Tips with Balsamic Sherry Sauce over Angel Hair Pasta

1 lb beef tips
1 lb asparagus
1 lb whole wheat angel hair pasta
2 mushrooms, diced
1 tsp cracked black pepper
½ onion, diced
3 cloves garlic, minced
1 ½ tbsp kosher salt
2 tbsp balsamic vinegar
3 tbsp olive oil
4 oz dry sherry or wine of your choice
Boil pasta as directed on package. While pasta is cooking, sauté beef in medium sauté pan, add salt and pepper, then balsamic vinegar. Let balsamic reduce slightly, then de-glaze pan with sherry. Keep warm while finishing pasta and asparagus.
In separate pot, blanch asparagus in boiling water for 2 minutes. Remove from water.
Serve beef tips and sauce over angel hair, garnished with asparagus spears.
