Wasabi Tuna Slider with Pickled Ginger and Cucumber

Ahi Tuna Slider
Ahi tuna
2 tsp. ginger
2 tsp. chives
2 tsp. garlic
1/4 tsp. lime zest
1/2 tsp. kosher salt
1/4 cup sesame oil
Mix all ingredients together in a small mixing bowl and form into 2 oz patties. Heat a small amount of sesame oil in a Teflon sauté pan. Lightly brown the patties on each side and remove from heat. Serve with toasted sesame buns.
Wasabi Mayonnaise
2 tbsp. wasabi powder
1 tbsp. water
1 cup kosher salt
2 tbsp. sesame oil
1/4 cup soy sauce
Mix the wasabi powder with water to form a paste. In a separate bowl mix the remaining ingredients together. Add small amounts of wasabi paste to mayonnaise for preference of heat. Chill before serving
Pickled Cucumber Ginger Carrot
1 cucumber sliced thin
1 large carrot peeled and sliced thin
Fresh ginger sliced thin
1/4 cup rice wine vinegar
1 tbsp. sugar
1 tsp. salt
Pinch of black sesame seeds
Mix all ingredients together in a small bowl and allow marinating for 30 minutes before serving.
