Orzo Pasta Salad

32 oz. orzo pasta (cooked & chilled)
4 oz. artichokes
1 cup green peas
1 cup shredded carrots
1 cup chopped med. black olives
1 cup baby corn
1 cup med. diced yellow squash
1 cup med. diced green zucchini
1/2 cup light mayonnaise
2 tblsp. extra virgin olive oil
1 tbsp. kosher salt
1 tsp. black pepper
1 tsp. minced garlic
1 tbsp. dried parsley
1 tbsp. basil minced (fresh or dried)
Combine all the ingredients, toss and mix together by hand. Set in the refrigerator and chill one hour or longer. Serve on lettuce with grilled or pan seared pork or poultry.
