Lemon Ginger Madeleines

4 Dozen Cookies
1 1/2 cups all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 pound unsalted butter
3/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
Zest of 2 lemons
1 inch ginger root, peeled and minced
4 large eggs
1. Sift the flour, baking powder and salt together.
2. Combine the butter, lemon zest and ginger in standing mixer. Mix while adding the sugar until light and creamed.
3. Add the vanilla, and then the eggs individually, scraping the bowl with each addition.
4. Add the dry ingredients in 2-3 parts, scraping with each addition.
5. Refrigerate the batter overnight, or at least 2 hours.
6. Place into prepared molds and bake at 375 for 10 - 15 minutes, until golden brown and firm.
