Chilled Hearts of Palm Soup with Crab and Fruit Salsa

Serves 4
4 cups soy milk
1 tablespoon honey
1 14 ounce can hearts of palm drained
8 ounces artichoke hearts
Pinch of salt
Place all items in blender and mix until smooth.
4 ounces crab meat
4 ounces chopped watermelon
4 ounces chopped avocado
1 ounce finely diced red onion
Fresh cilantro to garnish
Place all items in mixing bowl and season with a pinch of salt, mix thoroughly and place on soup as garnish.
